Quinoa Delight

 

It truly is a delight. Mostly because it’s covered in beets and goat cheese. Can we just go with chevre instead of goat cheese?

I worked in finance for a couple years in SF and we were often encouraged to stay at “the desk” and “on the phones” until the market closed (aka 1pm PST). Which meant we didn’t really leave to get lunch until about 1:30pm those days. A lot of places were closing for lunch at that time but there was a cute little French grab and go cafe on Kearny that had this amazing little box that just had arugula, quinoa, goat cheese chevre, and beets and it came with a little cup of parsley vinaigrette. I generally don’t like salad and I would crave this, which really says something.

Whenever I want to eat clean, I make this. It’s perfect during the week and you can keep the quinoa, beets, and goat cheese untossed in a box in your fridge, scoop some out and mix with lettuce and the champagne parsley vin as you please. Tonight I added some grilled chicken thighs. You know when you’re trying to transition off of vacation dining but can’t just go cold turkey to salad so you have to have a side of hot and salty chicken? It me.

Anyway - I have great news: I’m not going to bore you with more story than I already have. That’s right. Just a few photos and a recipe and you’re off scot-free.

One thing I will mention is that I’m not big on measurements. Everyone’s tastes are different. Get wild and comfortable with your senses and you’ll be fine!

can someone tell me what hand blenders are good for besides soup, dressings and aioli…? WAIT THAT’S PLENTY OF REASON FOR AN APPLIANCE!

you literally just throw some cooked quinoa in a bowl and throw cooked beets on top

and obv *some chevre and maybe more parsley for good measure

*some is a loose term and to some people that could mean a whole package

wait what how are you so delicious are we putting sweetgreen out of biz or what? lol jk!!

Quinoa Delight - Serves 4ish?

INGREDIENTS

-Bears, Beets, Battlestar Ga.. 3 cooked then peeled & chopped medium to small beets or 2 large. Any color is good!

-1/2C Raw Quinoa, cooked to package instructions

-A little log of chevre. Use as much or as little as you want!

-A bag of arugula or a few big handfuls

-Dressing: Half a lemon, 1/3c EVOO, a squeeze of dijon, a squeeze of honey or hot honey, like 2 glugs of champagne vinegar, a tbsp of parsley (or small handful whatever), s&p

SUGGESTIONS

Make dressing by combining all ingredients in a blender or hand blender. Taste. If too tangy, add more evoo. If not enough zippy, add more dijon. If not sweet enough for you, more honey. Adjust S&P as necessary. Refrigerate until ready to use.

Assemble quinoa box by putting a layer of quinoa in a tupperware then adding chopped beets, goat cheese and parsley garnish on top. Put in fridge until ready to use.

Complete salad by tossing contents of quinoa box with some arugula and dressing. Chicken goes well with this and I’m sure some toasted sliced almonds would be delicious too.
